The first question that you must be asking yourself is just how you are expected to smoke with a gas fuel. Well, the answer is simple, use the smoke box on your barbecue. As most high-end models come equipped ready to smoke with a smoke box, you need to take advantage of that. While you can drop the wood in there easily, you can also use propane to smoke it. While you will still be using wood in a way, the heat will always be properly maintained. This is because just like with any other application of propane, you will have more control than with any other cooking medium. You will also save yourself having to buy anything to light the fire. The propane is sitting in the tank already and you can simply use that. The wood method will find you having to use a chimney or electric firestarter. In order to use either method, you may need to employ the use of lighter fuel. This will give your barbecue a nasty taste.

How Smokers Work
The smoker is basically using heated air to cook the food. The flames or direct heat will never see the food. You place wood chips in the box and hot air travels to the box and gets the wood to their smoke point. If the air is hot enough to start setting the wood on fire, it is hot enough to cook your food. Just know that cooking times are largely increased when using this method, but it will be worth the wait. You cannot get that kind of taste without having to make the sacrifice of time. On a side note, if your grill does not already come equipped with a smoker box, you can always by one and just set it on top of your grill. The heat from below will heat the wood chips inside and cause them to smoke just as if you had one already attached to your grill. This may seem a little strange, but it will be worth it when it comes to eating it.
